In our workshop Grazia from Il pane di una volta will show you how to deal with an enriched and laminated dough with a simple step-by-step guide. Topics and techniques explored in this class include dough composition and lamination, yeast fermentation, mixed leavening with sourdough culture, gluten development, and flavor formation.  You'll discover how easy it is to make this most loved French/Italian breakfast treat at home!

This Workshop will be held in English with course material in English and German. If required, there will also be an interpreter available.
