Symbol of peace and resurrection, la Colomba di Pasqua («Easter Dove») is an Italian traditional Easter bread, prepared during Easter holiday . Colomba dough is the same of Panettone, soft, fragrant, rich in butter and eggs; unlike panettone, it is usually garnished with orange candied peel and no raisins. The topping is a baked-on almond icing that is applied before baking, giving it a sweet, crisp crust. During the workshop will look at techniques to deal with the dough, shaping it as a Dove and particularly at Lievito madre, the stiff sweet starter fundamental for a great Colomba. Delicious on its own, Colomba can be served with spreads, paired with whipped cream, slice it with coffee for breakfast and we love to pair the festive cake with a glass of Prosecco or dessert wine.
This Workshop will be held in English with course material in English and German. If required, there will also be an interpreter available.
