Symbol of peace and resurrection, la Colomba di Pasqua («Easter Dove») is an Italian traditional easter bread, prepared during easter holidays. Colomba dough is the same as Panettone, soft, fragrant, rich in butter and eggs; unlike panettone, it is usually garnished with orange candied peel and no raisins. The topping is a baked-on almond icing that is applied before baking, giving it a sweet, crisp crust. During the workshop we will look at techniques to deal with the dough, shaping it as a dove and particularly at Lievito Madre, the stiff sweet starter base for a great colomba. Delicious on its own, colomba can be served with spreads, paired with whipped cream, sliced with coffee for breakfast or enjoyed with a glass of Prosecco or dessert wine.
This Workshop will be held in English with course material in English and German. If required, there will also be an interpreter available.
